Vegan Chocolate Almond Protein Bars

These vegan friendly almond protein bars are delicious, filling and like most of my recipes super easy to make. The filling is squidgy and the chocolate and nuts on the top give it a crunchy texture in contrast, making them so moreish!

I snack on these before and after a workout, dependant on how hungry I am and how much time I have! I make these on a Sunday and then leave in the fridge for the week so I can snack at any time I want.

If you are a chocolate lover then these are for you! You can get your chocolate fix without any guilt – how good is that!

Instructions
  1. Grease a 8x8 inch square tray or dish
  2. In a food processor mix together the ground almonds, oats, salt, protein powder, cinnamon and maple syrup until smooth
  3. Press the mixture into the prepared dish/tray
  4. Melt the chocolate in a bowl over a pan of boiling water and stir until melted
  5. Drizzle over the bars and top with the sliced almonds
  6. Put in the fridge for about 20 minutes until set, then slice into bar shapes of your choice
  7. Store in an airtight container, these will last for a couple of weeks
