Salmon, Quinoa & Chilli Pak Choi

Delicious, tangy, spicy AND Super healthy. I love to do this recipe when I want a quick and easy supper.   I always have salmon in the fridge/freezer and quinoa in the store cupboard.  If I don’t have pak choi I will use broccoli or any other green I have in the fridge.  We have this usually once a week and I bet you will love it too.

Instructions
  1. Preheat oven to 180c.
  2. Cook the quinoa according to the instructions or heat a ready made packet in the microwave.
  3. Combine the sesame oil, soy sauce, honey, ginger and lime juice. Put half into a bag and add in the salmon fillets - marinade for minimum 30 minutes if you can.
  4. Once marinated put the salmon fillets onto a baking tray lined with foil skin side up. Bake for approx 15 mins in the oven or until cooked but translucent in the middle.
  5. Warm the sesame oil in a wok or large frying pan over a medium high heat. Add the spring onions, garlic, chilli and ginger and cook for 2 mins then add the pak choi and fry for a further 2 minutes.
  6. Stir in the cooked quinoa, remaining marinade and season with extra soy and fish sauce.
  7. Serve the salmon on top of the quinoa and pak choi.
