Roasted Broccoli Salad with Balsamic & Feta

This is my one of my favourite salads at the moment. Its super tasty and healthy whilst having all the right textures and flavours. Its creamy from the Feta, tangy from the balsamic and lemon and comforting from the roasted garlic, broccoli and Kale. I like to add char-grilled chicken but you can keep it veggie if you like.

  1. Preheat oven to 180c.
  2. In a large baking tray, toss the broccoli, pine nuts and 2 tbsp of the olive oil - season. Pop in the oven and roast for 15 minutes, after this time add in the Kale, stir it up and roast for a further 10 minutes.   3. Make the dressing. Mix the remaining olive oil, lemon juice, balsamic vinegar and chilli flakes - season to taste. Step 3 Make the dressing. Griddle for 3 mins a side. Checked the meat is cooked inside. Once the broccoli has roasted, pour over the dressing, feta, avocado, parsley and mix it up to develop all the flavours together. Layer the chicken on top. Et Voila!
