Unsweetened Dried Coconut Flakes
Put the figs, vanilla extract and almonds into a food processor and mix until well combined and paste like.
Place a sheet of baking paper onto a flat surface and sprinkle with half the coconut flakes.
Transfer the fig mixture on top of the baking paper and coconut flakes, then press out into a rectangle shape using your fingers.
Sprinkle the remaining nuts and coconut flakes on top, then place another sheet of baking paper on top and use a rolling pin to press the nuts into the mixture.
Put into the fridge or freezer to cool for 3 hours, then cut into desired shapes.
Store in an airtight container.
