Raw Fig Bars with Coconut & Nuts

These raw fig bars are very easy to do as there is no cooking involved, the use of raw ingredients means you get the most nutrition from them.  Figs are high in fibre and good source of potassium and iron.

These are perfect to keep you energised all afternoon so work great as a healthy snack.

Feel free to add any nuts that you like, or even melted dark chocolate would make them extra special!

Raw Fig Bars

  1. Put the figs, vanilla extract and almonds into a food processor and mix until well combined and paste like.
  2. Place a sheet of baking paper onto a flat surface and sprinkle with half the coconut flakes.
  3. Transfer the fig mixture on top of the baking paper and coconut flakes, then press out into a rectangle shape using your fingers.
  4. Sprinkle the remaining nuts and coconut flakes on top, then place another sheet of baking paper on top and use a rolling pin to press the nuts into the mixture.
  5. Put into the fridge or freezer to cool for 3 hours, then cut into desired shapes.
  6. Store in an airtight container.
