Protein Packed Peanut Butter Granola Recipe

This protein packed Peanut Butter Granola recipe is perfect for breakfast with a dollop of fresh greek yoghurt and some berries. It’s my go to breakfast of choice when I want something filling and I don’t have much time. The peanut butter packs extra protein and served with greek yoghurt this will give you a whopping 11g of protein for breakfast.

Sometimes with store bought granola you end up with a hefty salt or sugar intake. With this homemade version you know exactly what is going in and its full of yummy goodness.

Once made store in an airtight jar or container for approx 3 weeks.

Instructions
  1. Preheat oven to 170c. Melt together the coconut oil, maple syrup and peanut butter until liquid and set aside.
  2. Mix together all of the dry ingredients in a bowl.
  3. Add in the liquid mixture and combine well.
  4. Place onto a baking tray and put into the oven for 15 minutes, stirring occasionally so the edges don't burn.
  5. Leave to cool and serve in an airtight jar or container. Will last for up to 3 weeks.
