Homemade Granola

I have always struggled with shop bought granola, I would stand in the shopping aisle for about 20 minutes trying to find a granola which didn’t have too much sugar. But I would always fail and end up buying the stuff anyway, then eat it thinking I’m being kinda healthy, knowing that I’m not really.

Then I started making my own, like anything I cook myself I know what goes into it and I can adapt it to my own taste. The first time I made this the house smelt amazing, prompting my husband to come downstairs and say “what are you baking? I want some!”

This recipe is easily adjustable, you can chuck in any other dried fruit, nuts or seeds. I also sometimes dust with cinnamon.. but I LOVE cinnamon.  I eat this granola either on its own, with yoghurt or chia seed pudding for a healthy dessert.

Instructions
  1. Preheat oven to 180c
  2. Combine all the oats, seeds and nuts in a bowl
  3. In a separate bowl, add the sea salt, honey, vanilla extract and coconut oil and mix well
  4. Combine wet and dry ingredients and pour onto a flat baking tray
  5. Bake in the oven for 20 minutes, stirring occastionally
  6. Turn the oven off and leave to cool completely
  7. Once cool add the dried fruit
  8. Serve or store in an airtight container like a jar, will keep for a good 2 weeks (although im sure it wont last that long!)
