Healthy Chicken Kebabs

Everybody loves a kebab, but they can be very unhealthy if you order them from take aways. I love making these at home as you know what is going into them, so you know they will be juicy, healthy and delicious. Plus, you can do lots of healthy side dishes, salads, dips etc and everyone can build their own. These particular chicken kebabs go well with a simple gem lettuce and herb salad, and a tsatziki style dip.

The sumac gives them a greek type of flavour so the tsatziki works well here. For the flatbreads you can either make your own if you prefer ( I recommend this recipe, I use this often as its so simple). If you don’t want to serve with flatbreads, a quinoa salad is a great option for an even healthier version. Try this salad which would go perfectly with this recipe – Feta Salad.

Instructions
  1. Marinade chicken: Put the chicken into a bag with the olive oil, 1tsp Sumac, juice half a lemon, garlic, thyme and chilli flakes. Marinade for 20 minutes minimum.
  2. Griddle or grill the chicken until lightly charred and cooked inside, about 10-12 minutes. Once cooked set aside.
  3. Yogurt dip. Combined the yoghurt, mint, remaining sumac and some lemon juice into a bowl, season and set aside.
  4. Salad. Put the gem lettuce and cucumber into a bowl and season with sea salt, pepper and a dash of olive oil.
  5. To serve. Serve the chicken with the flatbreads warmed, salad, yoghurt dip, pomegranates in a little bowl on the side. Help yourself!
