My favourite foods consist of lots different tastes and textures, I find this in a lot of Asian cuisine. I love spice aswell, so this Thai chicken salad recipe is delicious to me as it combines the typical thai flavours. Its hot from the chillies, sweet from the mangos, salty from the peanuts and fish sauce, and sour from the limes. I love the texture the nuts bring to it so I always tend to go heavy on the nuts..:)
Its light in carbs and high in protein and fibre. For a vegan friendly version drop the chicken and maybe substitute with Tofu.
