Cod and Broccoli Coconut Curry Recipe

Firstly, make the curry paste by putting the onion, garlic, ginger, chillies, lemongrass, fish sauce, lime juiced and the oil into a food processor and blitz to a paste.
Next fry the paste in a frying pan over a medium heat for about 5 minutes to release all the flavours.
Stir in the curry leaves and the coconut milk and simmer for 10 minutes.
In a separate pan steam or boil the broccoli for about 3-5 minutes until slightly softened but still firm.
Add the cod to the curry mix and simmer for 3-5 minutes until the fish is cooked.
Add in the broccoli and heat up for about a minute.
Serve with chopped chilli and coriander sprinkled on top. Enjoy!
