Cod Curry Recipe with Broccoli & Coconut Milk

This beautiful cod curry recipe will impress! It’s quick and made with few ingredients but you still get the complexity of a curry which has been cooked for a long time. The cod should just flake into large juicy pieces and not be too dry, it will soak up all the delicious curry gravy!

It’s very healthy and a great alternative for a Saturday night curry, if you want a delicious healthy version.

Serve with a cauliflower rice, quinoa or brown basmati for a healthy carb to compliment.

  1. Firstly, make the curry paste by putting the onion, garlic, ginger, chillies, lemongrass, fish sauce, lime juiced and the oil into a food processor and blitz to a paste.
  2. Next fry the paste in a frying pan over a medium heat for about 5 minutes to release all the flavours.
  3. Stir in the curry leaves and the coconut milk and simmer for 10 minutes.
  4. In a separate pan steam or boil the broccoli for about 3-5 minutes until slightly softened but still firm.
  5. Add the cod to the curry mix and simmer for 3-5 minutes until the fish is cooked.
  6. Add in the broccoli and heat up for about a minute.
  7. Serve with chopped chilli and coriander sprinkled on top. Enjoy!
