Banana & Blueberry Cookies

I really love making cookies and I had a little time the other day and wanted to make something yummy but healthy aswell. I had a look in the cupboards and had some dried blueberries which needed eating and also some very ripe bananas, so I thought, why not try and make some cookies with these! I was so happy with how they turned out I thought I had to share it with you. They are sweet and chewy, but also slightly crispy on the edges (which I like!). You can make them more blonde by adjusting the cooking time.

These Banana & Blueberry cookies are super healthy but you would never guess that if you didn’t know how they were made. There is no butter or refined sugar in this recipe. The main ingredient is oats which provide protein, fibre, antioxidants, vitamins and minerals! They’re softened with banana and sweetened with honey, blueberries give a chewy texture and extra antioxidants.

 

 

They’re so healthy, they would make a perfect breakfast if you served with some natural yoghurt. Or you can just snack on them throughout the day or evening.

Instructions
  1. Preheat oven to 170c.
  2. Line 2 baking sheets with parchment paper.
  3. In a large bowl, mix together all of the ingredients.
  4. The mixture should be well combined, using wet hands pick make hand sized balls with the mixture and flatten onto the baking sheets into a cookie shape.
  5. Bake in the oven for 20 minutes until well golden.
  6. Leave to cool. Store in the fridge in an airtight container for approximately one week.
