Baked Blueberry Oatmeal

This is a really simple and delicious way to eat oatmeal! Once made these can be kept in the fridge for about a week so you can have as a healthy snack if desired. These baked blueberry oatmeal squares are gluten free, easy and delicious! You can omit the eggs for a dairy free version, they will just be slightly less set but will still hold together.

Instructions
  1. Preheat the oven to 180c (adjust for fan assisted)
  2. Grease and line a baking tray with parchment
  3. Mix together the dry ingredients and wet ingredients in separate bowls
  4. Put half of the blueberries in a layer in the baking tray
  5. Cover with the dry ingredients
  6. Pour over the wet mixture and stir about so well spread in the tray
  7. Spread the remixing blueberries on top
  8. Bake for about 40 minutes until nice and golden
  9. Leave to cool and then cut into squares
